Lord of the Rings: Twice Baked Honeycakes Recipe
Twice Baked Honeycakes from the Lord of the Rings series is a delectable treat prepared by Beorn. served to Bilbo Baggins and Thorin's company of Dwarves. These made-to-travel "cakes" make for the perfect sweet addition to any perilous journey, integrating the tantalizing tastes of honey with the tang of fresh lemons. This version of the recipe is inspired by the culinary expertise of Binging with Babish. For your enjoyment, I took the guesswork out of this recipe and tried it myself - with a little twist of course.

Honeycakes Hobbit Haul
What You'll Need:
- 120G unsalted room temperature butter
- 3 Large Eggs
- 175ML of Honey (Maple Syrup works too)
- 1 1/2 TSP of Vanilla Extract OR Caramel Flavoring
- 1 Lemon (zested)
- 500G All-Purpose Flour
- 1/2 TSP Baking Powder
- 1/4 TSP Baking Soda
- 1/2 TSP Salt
- 200G Powder Sugar
- 45G of Honey
- Skim/Oat Milk (splashes)

UNPACK YOUR BOUNTY
In a large bowl, cream together your room temperature butter, 2 large eggs, and honey. On my second attempt at recreating this recipe, I did try it with maple syrup and the flavor was amazing! There was a tad more sweet woody notes to the mix - so if you are a fan of maple, might be worth a try. Continue blend blend blending that trio together on medium speed, then slowly add your zested lemon, and vanilla extract. I teetered away at this part and tried it with store-bought caramel flavoring... and let me tell you, in combination with the maple syrup? life changing.
BRING THE HEAT
Preheat your oven to 350 degrees. In the meantime, mix together your dry ingredients: flour, baking powder, baking soda and salt. Like an avalanche, drop your dry mixture into the bowl of the wet mixture and mix for a couple minutes till you get a dense-like dough.
FORGE YOUR WEAPON
Like any good craftsperson, the key to a successful journey is making sure your arsenal of weapons (or baked goods) is made to perfection. Remove mixture from mixing bowl and shape into two cylindrical shapes. Make sure these have plenty of height and thickness as to mimic the look of a "cake" - as Babish would say. Afterwards, place both dough pieces onto a baking sheet with parchment paper. Brush the paper with one beaten egg, and sprinkle with any household sugar. Place in the oven for 20min or until golden brown.
FOCUS ON THE KILN
Remove honeycakes from the oven and cut into 1/2 inch size cake shapes. Place back in the oven at 300 degrees for 20 min. Make sure you flip the cakes half way to get both sides baked equally. Once completed, remove honeycakes from the oven and set aside to cool down for about 15 min.
If you're obsessed with a sugary glaze like I am, you'll love this one. In order to make sure the honeycakes taste honey, you will be adding the icing sugar and, remaining honey. Whisk until the mixture creams and becomes thicker. To thin it out a bit more, add splashes of milk, otherwise it should be fine. If you're feeling extra adventurous, add a bit more lemon zest for some extra tang.
Generously drizzle your glaze over the honeycakes and enjoy! Protect your precious at all costs from any would be raiders, orcs and Gollum..,
